Piadina with Grilled Peaches

Procedure

Heat the spelt piadina in a non-stick pan.

Meanwhile, slice the peaches thinly and grill them on a pre-oiled griddle.

Assemble the piadina: add baby spinach, prosciutto, grilled peaches, dollops of ricotta, and fresh thyme leaves. Finish with a drizzle of extra virgin olive oil.
